What size cooktop do I need?

Match the cooktop to the cutout you already have, which is usually sized for a 30-inch or a 36-inch unit. A 30-inch cooktop typically gives you four burners, and a 36-inch gives you five plus more room between pans. Measure the existing opening width and depth first, then check the cutout dimensions on the model's specification sheet before ordering.

Is an induction cooktop worth it?

If you cook often, yes. Induction boils water noticeably faster than gas or radiant electric, holds a low simmer without hot spots, and the glass around the pan stays cool enough to be much safer with kids in the kitchen. The catch is cookware: pots and pans have to be magnetic, so test yours with a fridge magnet before you buy. Add the cost of replacing whichever pans fail that test to the price of the cooktop, because in some kitchens that is the number that decides it.

Do I need special pans for an induction cooktop?

You need cookware with a magnetic base, which is not the same as cookware sold as special. Cast iron, enameled cast iron, carbon steel and most magnetic stainless all work; plain aluminum, copper, glass and ceramic do not, and some stainless is not magnetic either. Test each pan by holding a fridge magnet against the bottom: if it grabs firmly, the pan will heat, and if it barely sticks or slides off, it will not. Anything labeled induction ready or carrying the induction coil symbol has already passed that test.

Can I use an adapter so my old pans work on induction?

Yes. An induction interface disk is a magnetic plate that sits between the glass and a non-magnetic pot, taking the heat itself and passing it up, so an aluminum or copper pan will cook on an induction surface. It is a compromise, because heating the disk first costs you the instant response and much of the efficiency that make induction worth buying in the first place. Use one for a favorite pan you cannot replace, not as a plan for the whole kitchen.

Can I replace a gas cooktop with an electric or induction one?

Usually, but it is an electrical job rather than a swap. Electric and induction cooktops need a dedicated 240-volt circuit that a gas cooktop location will not have, and the gas line has to be capped off properly. Do I need a range hood over a cooktop?

Strongly recommended, and required by many local codes for gas. Frying, searing and boiling all put grease and moisture into the air, and a gas burner adds combustion byproducts on top of that. What is the difference between a cooktop and a rangetop?

A cooktop drops into the countertop and has its burners and controls on the top surface. A rangetop is a heavier professional-style unit that slides between cabinets with front-mounted knobs and no oven. Cooktops are the more common and more affordable choice for most kitchens.

Are glass and ceramic cooktops hard to keep clean?

They are the easiest surface to wipe down, as long as you treat them properly. Clean spills once the glass has cooled, use a cooktop cream rather than an abrasive pad, and avoid dragging cast iron across the surface. Sugary spills should come off while still warm, because they can pit the glass if they are left to harden.

Can I install a cooktop myself?

The drop-in part is straightforward if the cutout already fits, but the connection is not a do-it-yourself job. Gas cooktops need a licensed plumber or gas fitter, and electric and induction models need hard-wiring to a dedicated circuit. Ask about professional installation when you order.

1. Start with the cutout, not the cooktop

Cooktops drop into a hole cut in the countertop, and that hole is the constraint. Measure the width and depth of the existing opening, then check the specification sheet for the model you want, since the cutout dimensions and the overall glass size are different numbers. Also measure the cabinet below: a downdraft unit or a deep gas burner box can collide with a drawer.

2. Pick your fuel and heating type

Induction is the fastest and most precise, keeps the surface cool around the pan, and wipes clean, but it only works with magnetic cookware. Radiant electric puts heating elements under a smooth glass top for a lower price and no cookware restrictions. Gas gives you a visible flame, instant response and works with woks and warped pans, but it needs a gas line at the cabinet.

3. Match the burner layout to how you cook

Count how many pans you actually run at once. Four burners suit most households; a five-burner 36-inch layout helps if you cook multiple dishes or use a large stock pot. Look for one high-output burner for boiling and searing, and one low simmer burner if you make sauces.

4. Decide whether you also need a wall oven

Going with a cooktop means buying an oven separately, and that is the whole point for a lot of remodels: the oven goes into a cabinet at a comfortable height, and the cooktop goes on the island or the run of counter you use most. If your budget covers only one appliance right now, a range is the cheaper route. If you already have cabinetry to work with, pair the cooktop with a single or double wall oven.

A cooktop and wall oven, or one range?

Split them if you are remodeling and the layout is genuinely still in play. That is the point of a cooktop: the burners and the oven no longer have to share the same three feet of wall, so the cooking surface goes on the island or the longest stretch of counter, and a wall oven goes into a tall cabinet at chest height where nobody lifts a hot roasting pan up from knee level. Two people can also work at the same time without one standing in the other's way.

Buy one range instead if the kitchen is staying where it is. Two appliances means two prices, two cutouts and two connections, and the cabinet beneath a cooktop gives up its top drawer to the burner box, so you lose storage as well as money. A range lands in a single opening, which makes it far the simpler swap. Compare gas ranges and electric ranges before you commit to the split.

Induction, electric or gas cooktop?

Induction is the one to buy if the budget stretches and your pans are magnetic. It boils faster than either alternative, follows the dial instantly, and because only the pan heats, the glass around it stays cool enough to be much safer with children nearby and easy to wipe as soon as you finish. Test your cookware with a fridge magnet first: aluminum, copper and some stainless will not work at all, and replacing the pans you use every day is a genuine cost to add to the price.

Radiant electric is the value pick, with the same flat glass and no cookware restrictions, though the elements lag behind the dial and the surface stays hot after you switch off. Choose gas if the line is already at the cabinet and you want a flame that wraps around a wok or tolerates a warped pan, and accept that grates and burner caps have to come off to clean underneath. Gas also needs the most extraction of the three, so size a range hood to the full width of the cooktop rather than to the cabinet above it.
