What is an air-fry mode on an electric range?

Are electric ovens better for baking than gas?

Do I need special pots and pans for a smooth-top range?

You need flat-bottomed cookware. Smooth tops transfer heat by direct contact, so a warped or ridged base leaves a gap and cooks unevenly. Heavy flat-bottomed stainless, aluminum and enameled cast iron all work well. Induction adds one more requirement, which is that the pan has to be magnetic.

Can an induction range use the same outlet as my old electric range?

Usually yes, because an induction range runs on the same type of dedicated 240-volt circuit as a radiant electric one. Check the amperage the model calls for against your breaker, since some induction ranges ask for a larger circuit than an older range did, and note whether your outlet is three-prong or four-prong so the right cord kit goes on. If you are coming from gas instead, an electrician has to run a new circuit and the gas line has to be capped off properly.

Do I have to replace all my cookware if I buy an induction range?

Almost certainly not all of it. Cast iron, enameled cast iron, carbon steel and any stainless pan a fridge magnet clings to will work exactly as they do now, and most kitchens already own several. What will not work is plain aluminum, copper, glass and the non-magnetic stainless some sets are made from, so go through your pans with a magnet before you order and price replacements only for the ones you reach for daily. A single magnetic skillet and one magnetic saucepan is usually enough to cook on from day one.

Is induction better than a smooth-top electric range?

For cooking performance, yes. Radiant smooth top is the most common. Heating elements sit under a single sheet of ceramic glass, so there are no drip pans and the whole surface wipes down flat. Elements glow and fade rather than responding instantly, and the glass stays hot for a while after you switch off.

Coil elements are exposed metal spirals sitting in drip bowls. They heat fast, cost less, and handle a warped or uneven pan without complaint. Cleaning takes longer because the bowls come out separately, and the look is dated for most remodels.

Induction uses an electromagnetic field to heat the pan itself rather than the surface under it. Water boils noticeably faster, a low simmer holds without hot spots, and the glass around the pan stays cool enough to be far safer with children in the kitchen. The catch is cookware: pots and pans have to be magnetic, so test yours with a fridge magnet before ordering.

The 240-Volt Circuit, and Why It Matters

Electric ranges do not plug into a normal wall socket. They need a dedicated 240-volt circuit with a heavy cord and a large three or four-prong outlet, and the breaker has to be sized for the appliance. If you are replacing an existing electric range, that circuit is already there and the swap is straightforward.

If you are coming from gas, budget for an electrician to run a new circuit and for the gas line to be capped off properly. That work usually costs more than the difference between two models, so factor it in before you compare prices.

1. Measure the opening and check the cord

Standard electric ranges are 30 inches wide, with 24-inch and 36-inch options either side. Measure the cabinet gap at its narrowest point, then check the height under the counter and the depth to the back wall. Note the outlet type as well, since ranges ship without a cord and a three-prong outlet needs a different one from a four-prong.

2. Choose the cooking surface

Pick smooth top for easy cleaning and a flat modern look, coil for the lowest price and tolerance for old cookware, or induction for speed, precision and safety. Smooth tops and induction both need flat-bottomed pans to make proper contact, so a heavily warped pan will cook badly on either. Cast iron works on all three, but drag it across glass and you will scratch the surface.

3. Look at how the oven bakes

Standard bake uses elements at the top and bottom of the cavity. True or European convection adds a fan and a third element, which evens out hot spots, browns better and lets you use two racks at once. Convection recipes generally run about 25 degrees cooler and finish sooner. If you bake regularly, this is the feature worth paying for.

4. Decide which extras you will actually use

Air-fry modes run the convection fan hard at a dry high heat and usually come with a crisping tray, which saves counter space if you were thinking about a separate fryer. Self-cleaning burns off spills with a high-heat cycle. Warming drawers, double ovens and app control are all useful, but only if they match how you cook.

5. Plan the cleaning

Glass tops are the easiest surface to keep clean as long as you treat them properly. Wipe spills once the surface has cooled, use a cooktop cream rather than an abrasive pad, and lift pans instead of sliding them. Sugary spills should come off while still warm, because they can pit the glass if they harden. Coil elements are more forgiving but the drip bowls need separate washing.

Electric or gas range: which suits how you cook?

Go electric if the 240-volt circuit is already behind your range, if you bake, or if you want the cooking surface that takes the least work to keep clean. An electric oven holds a steadier, drier heat, which is what gives cakes, cookies and pastry even browning, and a single sheet of ceramic glass wipes down in one pass with no grates or burner caps to lift off. Adding a gas line to a kitchen that has never had one is licensed work, and it regularly costs more than the price gap between two ranges.

The genuinely useful modern answer is that induction, which is an electric range, now beats gas at the things gas was always chosen for. It brings a pan of water to the boil faster than a home gas burner, changes output the instant you turn the dial, and holds a low simmer without the hot ring a flame leaves under the middle of the pan. The honest catch is cookware, because the pan has to be magnetic. Choose a gas range if the line is already there and you want visible flame for charring, wok cooking or a warped old skillet.

Radiant smooth-top or induction?
