What is the difference between a range, a stove and an oven?

A range is a single appliance with burners on top and an oven underneath, and it is what most people mean when they say stove. An oven on its own is the enclosed baking cavity, sold separately as a wall oven. In everyday use range and stove mean the same thing, so shop both terms as one category.

How long does a range last?

Around thirteen to fifteen years for a gas range and a little less for electric, which makes a range one of the longer-lived kitchen appliances. Gas models tend to last longer because there is less to fail: burners and a gas valve rather than heating elements and control boards. What actually ends most ranges is the electronic control board or the oven igniter, and on a model past about twelve years those repairs often come close enough to replacement cost to be worth comparing. If you are replacing a range that came with the house, measure the opening before you shop, because a 30-inch cutout is standard but not universal.

Is a gas or electric range better?

It depends on what you cook and what your kitchen already has. Gas gives you instant heat, visible flame control and works with woks and warped pans. Electric, and especially induction, is easier to clean and holds a steadier oven temperature for baking. Compare gas ranges against electric ranges before you decide.

Should I get a single or a double wall oven?

A single wall oven suits most households and leaves the rest of the cabinet for storage or a warming drawer. Go double if you regularly cook two dishes at different temperatures, host big meals, or want to bake in one cavity while a roast rests in the other. The honest catch is that a double takes up a full tall cabinet and neither cavity is as tall as one large single oven, so a very big turkey or a tiered cake can be a squeeze. What size wall oven do I need?

Wall ovens are built in 24, 27 and 30-inch widths, and 30 inches is the most common in American kitchens. The cabinet decides which one you can use, so measure the opening width, height and depth and check all three against the cutout dimensions on the specification sheet, which are different numbers from the appliance dimensions. A double oven needs a noticeably taller cabinet than a single, so confirm the full height before you commit. If you are replacing an older wall oven, expect the cutout to have changed over the years and be ready for a little cabinet work.

What is a double oven range?

A double oven range splits the space into two separate cavities with their own doors and controls, usually a smaller one on top and a larger one below. You can bake at two temperatures at once, or keep a dish warm while something else roasts. The trade-off is that neither cavity is as tall as a single large oven.

Do I need a range hood over my range?

Yes for gas, and strongly recommended for electric. Frying and searing put grease and moisture into the air that otherwise settles on cabinets, and gas burners release combustion byproducts as well. Choose a hood at least as wide as the range and vent it outside if the run allows it.

Is convection worth paying for?

For most people, yes. The fan evens out hot spots, browns better and lets you bake on two racks without rotating trays. Recipes usually need about 25 degrees less than a conventional setting and finish a little sooner. If you mainly reheat and roast, standard bake is fine.

Freestanding, Slide-In or Drop-In

Freestanding ranges have finished side panels and a backguard with the controls on it, so they can sit anywhere in a run of cabinets or stand on their own. They are the most common type and the easiest swap, because the range simply slides into the gap.

Slide-in ranges have unfinished sides and front-mounted controls. The cooktop overlaps the counter on each side, which hides the seams and gives you a built-in look without cabinetry work. They need cabinets on both sides to work properly.

Drop-in ranges have no bottom drawer and sit in a cabinet cutout supported by the surrounding cabinetry, usually with a panel or toe kick below. They are the least common and are almost always a like-for-like replacement rather than a new choice.

One Range, or a Cooktop Plus a Wall Oven

A range is one appliance, one cutout and one connection, and it costs less than buying the two pieces separately. That is why most kitchens have one, and why a range is the sensible pick if you are replacing what is already there.

Splitting the two makes sense when you are remodeling. The cooktop goes on the island or the stretch of counter you use most, and the wall oven goes into a cabinet at chest height. You can also mix fuels, which is the usual reason people do it: a gas cooktop for the flame, an electric oven for steadier baking.

1. Measure the opening first

Standard ranges are 30 inches wide, with 24-inch and 36-inch models available for small kitchens and larger ones. Measure the gap between the cabinets, then measure the depth from the wall to the cabinet face and the height from the floor to the underside of the counter. Check the doorway and any turns the appliance has to make on the way in.

2. Work out which fuel you actually have

Look behind the current range. A thick cord and a large outlet mean a 240-volt electric circuit. A flexible metal line with a shutoff valve means gas. Switching from one to the other is not a swap: going electric needs a new dedicated circuit run by an electrician, and going gas needs a line run by a licensed gas fitter. If neither exists, the appliance is the cheaper half of the project.

3. Pick the oven features you will use

Convection adds a fan that moves hot air around the cavity, which bakes more evenly and lets you use two racks at once. Air-fry modes run the fan hard with a dry high heat, and many models now include a crisping tray. Self-cleaning uses a high-heat cycle to burn off spills. A double-oven range gives you two cavities so you can hold one dish while another finishes.

4. Count the burners and check the output

Four burners cover most cooking. A five-burner layout is worth it if you regularly run several pans or use a large stock pot. On gas, look for one high-BTU burner for searing and boiling and one low simmer burner for sauces. On electric, look for a power-boil element and at least one element sized for a big pan.

5. Plan the ventilation

Whatever you cook on puts grease, steam and odor into the room, and gas adds combustion byproducts on top. A hood that vents outside and is at least as wide as the cooking surface is the best answer. If ducting outside is not possible, a recirculating hood with charcoal filters helps with grease and smell but does nothing for moisture or heat.

A range, or a separate cooktop and wall oven?

Buy a range if the kitchen itself is staying as it is. One 30-inch opening, one fuel hookup and one appliance to pay for makes it both the cheaper and the faster route, and a like-for-like swap can be finished in a morning. For the large majority of replacements that is the whole answer.

Split the two when the cabinets are coming out anyway. A cooktop can go on the island where you actually prep, and a wall oven mounts in a tall cabinet at chest height, so a loaded roasting pan never has to come up from knee level again. Splitting also lets you mix fuels, gas on top and electric below. The costs are real, though: two cutouts, two connections, the loss of the top drawer in the cabinet under the cooktop, and a higher total than one range with the same features.

Freestanding or slide-in?

Freestanding is the right default. Finished side panels and a backguard behind the cooktop mean it does not care what sits next to it or behind it, so it drops into almost any 30-inch gap, including the open end of a cabinet run. At the same feature level it costs less, which is why it is what most kitchens have.

Pick slide-in when you want the cooking wall to read as built in. The controls move to the front and the cooktop laps over the counter on each side, which closes the crumb gaps and gets rid of the tall rear panel. Be honest about the installation: it needs cabinets on both sides, and because nothing covers the wall behind the cooktop anymore, you need a finished counter edge and usually backsplash there. Coming from a freestanding model, that often means a little countertop work on top of the appliance price.

Neither choice changes the opening, since both come in the standard 30-inch width along with 24-inch and 36-inch options, so this is a finish and layout decision rather than a fit one. Slide-in models are sold in gas, electric and induction just as freestanding ones are, and their front-mounted controls sit within easy reach, which is worth a thought if small children use the kitchen. If you like the built-in look but not the counter work, a freestanding range with a low backguard gets you part of the way for less money.
